Vegan marble cake

Ingredients for 1 servings:

  • 150 g sugar
  • 135 ml oil
  • 250 ml soy milk (soy drink) vanilla
  • 1 tbsp vinegar
  • ¼ bottle of rum flavoring
  • 250 g flour
  • 1 packet of baking powder
  • 3 tbsp cocoa
  • 3 tbsp soy milk (soy drink) vanilla
  • 80 g chocolate, dark

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 35 minutes; Total time approx. 55 minutes

Mix the sugar, oil, vanilla soy drink, vinegar, and rum flavoring in a bowl. In another bowl, combine the flour and baking powder, then whisk into the wet ingredients until no lumps remain. Pour half of the batter into a medium to small dish. Stir 3 tablespoons of cocoa and 3 tablespoons of vanilla soy drink into the other half of the batter, then pour it onto the light batter. Bake in an unheated oven at 175°C (top/bottom heat) on the second rack from the bottom for about 35 minutes. Test with a wooden skewer to see if the cake is cooked through, i.e. no batter is sticking to it. Let it cool, then turn it out. Melt the dark chocolate and cover the cake with it. Tip: You can also make a zebra cake in this way, alternating thin layers of dark and light batter in the dish.
