Ingredients for 1 servings:
- 500 g spelt flour
- 350 g raw cane sugar, brown
- 3 tbsp, heaped soy flour
- 1 packet of baking powder
- 1 packet of vanilla sugar
- 1 pinch of salt
- 250 g margarine, vegan
- 500 ml soy milk (soy drink) (vanilla flavor)
- 4 tbsp cocoa powder
- 50 g chocolate, dark

simple recipe for a bundt cake pan
Combine flour, sugar, soy flour, baking powder, vanilla sugar, and salt in a mixing bowl. Heat the margarine briefly in the microwave until softened, then add it to the flour. Add approximately 500 ml of soy milk and mix everything well; the batter should be nice and creamy. Grease and flour a Bundt pan. Pour in approximately half of the batter. Heat a splash of soy milk in a mug, stir in the cocoa powder, and then add it to the remaining batter in the bowl. Chop 50 g of chocolate into small pieces (I use kitchen scissors and cut off small pieces; it’s the quickest way) and stir it into the batter. Pour the chocolate batter into the pan and roughly mix it with the light-colored batter to create a “marbled effect.” Bake in a preheated oven at 180°C for one hour, then test for doneness. After cooling, you can dust the cake with powdered sugar or cover it with chocolate glaze. Tip: When it comes to cocoa powder, I use baking cocoa without any other additives, but powder for milk drinks also works (please be aware of non-vegan additives).
