Vegan muesli bars

Spread the love

Ingredients for 1 servings:

  • 100 g flour (wholemeal)
  • 250 g oat flakes, coarse
  • 40 g brown sugar
  • 60 g berries, mixed
  • 1 banana(s)
  • 1 tsp cinnamon
  • 1 tsp vanilla flavor
  • some water

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 35 minutes; Total time approx. 45 minutes

Knead the whole-wheat flour with the oats, sugar, cinnamon, and vanilla extract. Instead of sugar, you can also use 1 tablespoon of honey, but then it will no longer be vegan. Then, cut the banana into small pieces, chop the berries, and fold them in. Gradually add a little water until you have a dough that’s easy to knead but not too runny. If that happens, simply add a little more oats or flour. Spread the mixture into a rectangle on a baking sheet lined with baking paper and bake at 180°C for 30-45 minutes. After baking, let the mixture cool slightly. It will be a little soft at first, but don’t worry, that’s how it should be; it will firm up as it cools. While the mixture is still slightly lukewarm, cut into bars with a sharp knife, then let it cool completely and enjoy.
