Ingredients for 1 servings:

  • 100 g raisins
  • 1 cup(s) soy milk (soy drink) (soy-oat drink), alternatively soy or rice milk
  • 150 g sugar, preferably brown
  • 300 g coarse oat flakes
  • 200 g flour, wholemeal if desired
  • 1 pinch of salt
  • 1 pinch of cinnamon powder
  • 1 handful of mixed nuts, as desired
  • 1 package of wafers

Instructions

Working time approx. 25 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 40 minutes

Oatmeal cookies with trail mix

First, combine the flour, sugar, oats, salt, and cinnamon in a bowl or on a baking board and form a well in the center. Then, add the soy-oat drink, or alternatively, the soy/rice milk, and knead briefly with your hands. Don’t overdo it, or the dough will become mushy (it doesn’t need to come together at all, just mix it once). Finally, quickly add the nuts and raisins and mix briefly with your hands. Line the baking sheet lined with baking paper with the wafers, leaving some space between each wafer. Scoop out small amounts of dough with a tablespoon, place them on the wafers, and press them down lightly. If the batter has become too runny, simply let it rest for 10 minutes. The oats will absorb the liquid and the dough will firm up. Bake in a preheated oven at approximately 175°C for 10-15 minutes, until the mixture has firmed up slightly. Makes about 30 cookies.
