Vegan oatmeal with pumpkin puree and quince compote

Ingredients for 1 servings:

  • 2 tbsp oat flakes, fine
  • 1 tbsp millet flakes, fine
  • 2 tbsp cereal flakes (four-grain flakes), coarse
  • 1 tbsp lupin meal
  • ½ tsp cinnamon powder
  • e.g. water, hot
  • ½ small banana(s)
  • 1 small apple
  • 3 tbsp pumpkin puree
  • 2 tbsp compote (quince compote)
  • 2 tbsp soy yogurt (yogurt alternative)
  • n. B. Apple sweetness

Instructions

Working time approx. 7 minutes; Rest time approx. 10 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 22 minutes

Place the flakes in a bowl with lupin meal and cinnamon and cover with hot water. Microwave the oatmeal for 3 minutes at about 450 watts or cook it on low heat on the stovetop. Add more hot water if necessary. Meanwhile, finely chop the banana and grate the apple. Stir both ingredients into the flakes along with the pumpkin puree. Pour the quince compote and soy yogurt over the puree and top with the apple syrup.
