Ingredients for 1 servings:

  • 350 g flour
  • 100 g hazelnuts or almonds, ground
  • 4 tbsp cornstarch
  • 250 ml soy milk (soy drink) or oat milk
  • 1 cube of yeast
  • 125 g sugar
  • 1 pinch of salt
  • 50 ml oil
  • 30 g candied lemon
  • 30 g candied orange peel
  • 100 g raisins or sultanas
  • 1 packet of vanilla sugar
  • Oil, for brushing
  • Fat, for the shape

Working time approx. 20 minutes; Rest time approx. 1 hour; Cooking/baking time approx. 1 hour; Total time approx. 2 hours 20 minutes

Italian yeast cake, quick, easy and vegan

Put the flour, starch, and salt in a bowl. Heat the soy or oat milk in a saucepan, add the yeast cube, sugar, and oil, and heat until warm. When it’s lukewarm, pour it into the flour and knead into a smooth dough. This can be done by hand or with a mixer. Let the dough rise for 20 to 30 minutes. Finely chop the candied lemon and orange peel in a food processor or chop them finely with a knife. Once the dough has risen properly, mix in the vanilla sugar, candied lemon, orange peel, and raisins/sultanas. Let it rise again for about 20 minutes. Preheat the oven to 160°C. Grease a 26cm springform pan. Pour the dough into the pan and bake for 60 minutes. After about 30 minutes, brush the dough with a little oil. This will give it a nicer crust.
