Thai peanut sauce

Ingredients for 2 servings:

  • 2 tbsp oil
  • 2 tomatoes
  • 2 tsp red chili paste
  • 10 tbsp coconut milk or coconut cream
  • 4 tbsp peanuts, chopped and roasted
  • 4 tsp cane sugar
  • 2 tsp lime juice
  • 2 tsp soy sauce, light
  • 2 tsp soy sauce, dark

Instructions

Working time approx. 5 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 20 minutes

First, dice the tomatoes and fry them in the oil. Then reduce the heat and add the red chili paste. Finally, add the coconut cream/milk (depending on how thin you want the sauce), the peanuts, the sugar, the lime juice, and the soy sauce, and stir until the desired consistency is reached. It tastes great with Thai salads, spring rolls, fried vegetables/tofu, etc.
