Vegan Recipes with Chickpeas: 3 Ideas

Chickpeas are a versatile ingredient in vegan recipes, a perfect source of protein, and, most importantly, very tasty. In this practical tip, we present three purely plant-based dishes with chickpeas.

Vegan Chickpea Appetizer: Hummus

Hummus is a chickpea dip traditionally eaten with pita bread. It is also delicious with vegetables, crackers, or salad dressing. It’s so easy to make yourself:

  • Ingredients: 2 cans of chickpeas, 2 cloves of garlic, 2 tablespoons of lemon juice, 6 tablespoons of olive oil, 200 grams of tahini, salt
  • First, rinse all the chickpeas in a colander with cold water. Set aside 2 tablespoons of chickpeas.
  • Peel the garlic and chop it up.
  • Now puree all the ingredients with a hand blender. Season your hummus with a little salt.
  • To serve, place the remaining chickpeas on top of the hummus and drizzle oil over them.
  • You can spice up your hummus with a wide variety of ingredients, such as avocado, hot peppers, chili, Mediterranean herbs, tomatoes, and olives.

Main course: chickpea curry

Curries are one of the main dishes in vegan cuisine, the variety here is endless. This variant with chickpeas is particularly quick and can even be used by beginners:

  • Ingredients: 1 can of chickpeas, 75 grams of coconut milk, 300 grams of tomato passata, 1 teaspoon of garam masala, ginger (fresh or powder), salt, oil, and fresh coriander for serving
  • First, heat the oil in a large saucepan. Fry the chickpeas in it together with the salt, ginger, and garam masala.
  • After about 5 minutes, add the coconut milk and the tomato passata.
  • Mix the ingredients together and add coconut milk, garam masala, or salt to taste. Serve your finished curry with the coriander leaves.
  • Rice or naan goes well with this.

Dessert: Chickpea Blondies

Who would have thought that chickpeas could also be used in desserts? Impress even non-vegans with this vegan, gluten-free recipe for blondies (adapted from brownies):

  • Ingredients: 1 can of chickpeas, approx. 50 milliliters of maple syrup or agave syrup, 100 grams of peanut butter, 100 grams of chocolate chips, half a teaspoon of baking powder, half a teaspoon of salt, 1 tablespoon of vanilla, and sea salt crystals to taste
  • First, preheat your oven to 200 degrees. These blondies are made in one pan and use an oven-safe, non-stick one.
  • In a blender, mix all the ingredients together except for the sea salt. When everything has turned into a creamy mass, stir in half of the chocolate chips.
  • Now fill your batter into the pan and spread the other half of the chocolate drops on top. The blondies need about 20 minutes in the oven. They’re done when the edges turn golden brown.
  • Finally, put the sea salt over your blondies. Cut them into small pieces to serve.
