Vegan rice and vegetable meatballs

Ingredients for 1 servings:

  • 1 cup rice
  • 1 cup oatmeal
  • 1 cup(s) bell pepper(s) and corn, mixed
  • 1 tbsp cornstarch
  • salt and pepper
  • Garlic
  • oil

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 35 minutes

Cook the rice in salted water according to the package instructions. Meanwhile, mix the oats with a little water to create a thick porridge. Chop the vegetables, mix the cooked rice, vegetables, and cornstarch with the oatmeal, then season to taste. Heat the oil in a pan. Add the rice mixture a tablespoon at a time (it’s quite sticky, so I always use two spoons, one for pushing it off the other spoon), flatten slightly, and fry on both sides. Tip: You can also use any other vegetables and spices you like.
