Vegan Tiger Nut Waffles

Ingredients for 2 servings:

  • 100 g wholemeal spelt flour
  • 50 g tiger nut flour
  • 160 ml almond milk (almond drink)
  • 1 tbsp grapeseed oil or rapeseed oil
  • 1 tsp cream of tartar baking powder
  • 1 tsp cinnamon

Instructions

Working time approx. 10 minutes; Rest time approx. 15 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 35 minutes

Whole grain, no added sugar

Combine the whole-grain spelt flour (preferably freshly ground) and the remaining dry ingredients with a wooden spoon with a hole. Stir in the oil and almond milk. Let it rest briefly. Preheat the waffle iron and bake waffles in batches. The baking time will be a bit longer than for regular waffles, so check closely to see if the waffles are ready.
