Ingredients for 4 servings:
- 1 package of tofu, natural, diced
- 1 small onion(s), finely chopped
- 1 small garlic clove(s), finely chopped
- 2 tbsp soy sauce
- 4 tbsp peanut butter, creamy
- 2 tbsp sesame oil
- 1 head of broccoli, cut into florets
- 1 bowl of mushrooms, brown, sliced
- 2 tbsp curry paste, red
- 1 cup soy cream (Soy Cream Cuisine) or soy milk
- 2 cup(s) rice or small chopped potatoes, cooked
- 1 bag of cashew nuts
Instructions
Working time approx. 40 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 1 hour 10 minutes
Heat the sesame oil and fry the diced tofu on all sides until crispy and brown. Just before the end of the cooking time, add the onions and garlic and fry. Then add the mushrooms and sauté everything together for about 5 minutes. Add the broccoli and soy cream (or soy milk). Stir in the peanut butter and, if desired, curry paste. Add a dash of soy sauce and simmer until simmering, then season to taste. Sprinkle the nuts over the dish or fold them in at the end. Serve with rice or top with cooked potatoes cut into bite-sized pieces.
