Vegan wholemeal spelt pancakes

Ingredients for 1 servings:

  • 400 g spelt flour (wholemeal)
  • 1 pack of cream of tartar baking powder
  • 1 tbsp raw cane sugar or agave syrup
  • 1 pinch of salt (rock)
  • 2 tbsp flour (chickpea)
  • 4 tbsp water
  • 600 ml milk (plant milk), variety of your choice
  • some oil, neutral

Instructions

Working time approx. 5 minutes; Rest time approx. 30 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 50 minutes

Reduced sugar, lactose-free, egg-free, sweet or savory

Stir the chickpea flour and water until smooth. Combine the flour and baking powder. Then add all ingredients to the flour and mix with a whisk. Let stand for 30 minutes. Cook the pancakes in hot oil. Be sure to reduce the heat on the stovetop after the first pancake (I did it from 6 to 4), otherwise there’s a risk of sticking or burning!
