Sugar-free spelt pancakes

Ingredients for 2 servings:

  • 150 g wholemeal spelt flour
  • 200 g yogurt
  • 100 ml buttermilk or plant milk
  • 3 eggs
  • ½ pack of baking powder
  • n. B. Sweetener
  • Oil, neutral, for frying
  • n. B. Fruit
  • n. B. Skyr
  • n. B. jam

Instructions

Working time approx. 5 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 10 minutes

For the batter, combine the spelt flour and baking powder. Add sweetener of your choice, if desired. Then add the liquid ingredients and mix until a smooth batter forms. Heat a little neutral oil in a pan and add a ladleful of batter to each pancake. Flip the pancakes until lightly browned on both sides. After baking, top with skyr, fresh fruit, or jam, if desired.
