Ingredients for 2 servings:

  • 500 ml apple juice
  • 10 stalks of woodruff, fresh
  • 1 pack of agar-agar
  • 3 drops of food coloring, green, or 5 spinach leaves, pureed

Instructions

Working time approx. 5 minutes; Rest time approx. 12 hours; Cooking/baking time approx. 30 minutes; Total time approx. 12 hours 35 minutes

Fresh woodruff should be allowed to wilt overnight before preparation, and do not use more than directed. Take 100 ml of the 500 ml of apple juice and set aside. Simmer the woodruff stems in 400 ml of apple juice for 30 minutes. Stir the agar-agar powder into the remaining 100 ml of apple juice according to the package instructions. Remove the stems from the hot apple juice and add the 100 ml of agar-agar to the hot pot. Add food coloring or spinach puree as well. Stir well. Pour the mixture into bowls and let it set in the refrigerator overnight.
