Vegetable Bolognese with Ribbon Noodles
The perfect vegetable bolognese with ribbon noodles recipe with a picture and simple step-by-step instructions.
- 100 g Vine tomatoes
- 100 g 1 Zwiebel
- 2 piece Garlic cloves
- 10 g 1 Stück Ingwer
- 1 rote Chilischote
- 2 tbsp Olive oil
- 100 g 1 Stück Sellerie
- 100 g 1 Möhre
- 100 g 1 Stück Porree
- 100 g ½ rote Paprika
- 2 tbsp Tomato paste
- 250 ml Vegetable broth (1 teaspoon instant broth)
- 1 tsp Mild curry powder
- 1 tsp Baharat
- 1 tbsp Ketchup Manis
- 2 big pinches Coarse sea salt from the mill
- 2 big pinches Colorful pepper from the mill
- 100 g Whipped cream
- 2 tbsp Parsley cut
- 2 tbsp Creme fraiche Cheese
- 200 g Tagliatelle
- 2 tsp Salt
- 1 tsp Ground turmeric
- Wash and quarter the tomatoes on the vine. Peel and dice the onion. Peel and finely dice the garlic cloves and ginger. Clean / core the chilli pepper, wash and finely dice. Clean the celery, first cut into slices and then into fine cubes. Peel the carrot with the peeler, first cut into slices and then into fine cubes. Clean and wash the leek, halve lengthways and cut into rings / strips. Clean, wash and finely dice the peppers. Wash the parsley, shake dry and cut finely. Heat olive oil (2 tbsp) in a pan, add onion cubes, garlic clove cubes, ginger cubes and chilli pepper cubes and fry vigorously / stir fry. Add tomato paste (2 tbsp) and stir-fry / stir-fry. Now add the vegetables one after the other (celery cubes + carrot cubes, leek rings + paprika cubes) and fry / stir-fry. Deglaze / pour in the vegetable stock (250 ml) and sprinkle with mild curry powder (1 teaspoon), baharat (1 teaspoon), sweet soy sauce (1 tbsp), coarse sea salt from the mill (2 big pinches) and colored pepper from the mill (2 big pinches). Let everything simmer / cook for about 10 minutes, stirring every now and then. Add / fold in the whipped cream (100 g) and simmer / cook for another 5 minutes. If necessary, add a little more vegetable stock. Cook the ribbon noodles in plenty of salted water (2 teaspoons of salt) ground with turmeric (1 teaspoon) until they are firm to the bite according to the instructions on the package and drain through a kitchen sieve. Spread the ribbon noodles on plates, add the vegetable bolognese, sprinkle with sliced parsley and serve a dollop of crème fraîche.
