Vegetable casserole

Ingredients for 4 servings:

  • 1 red bell pepper(s)
  • 1 kg mixed vegetables (e.g. carrots, cauliflower, broccoli)
  • 1 cup of sweet cream
  • 200 ml milk
  • 4 eggs
  • 250 g cheese, grated
  • salt and pepper
  • 2 onions
  • 2 tbsp butter
  • 2 tbsp breadcrumbs
  • some butter for the mold
  • Nutmeg, freshly grated

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Trim and wash the bell peppers and cut into strips. Wash and trim the vegetables and cut into small slices or florets. Place in a bowl. Whisk together the cream, milk, eggs, and half of the cheese. Season to taste and pour over the vegetables. Peel the onions and slice into rings. Melt the butter in a pan and add the breadcrumbs. Toss the onion rings in the breadcrumbs. Preheat the oven to 200 degrees Celsius (400 degrees Fahrenheit). Grease a shallow baking dish with the extra butter and pour the vegetable mixture into the dish. Then bake in the oven for 20 minutes. Remove the casserole and spread the breaded onion rings on top, sprinkle with the remaining cheese, and bake for another 15-20 minutes until golden brown.
