Ingredients for 4 servings:

  • 1 large onion(s)
  • 1 bell pepper(s), red
  • 1 zucchini
  • 100 g mushrooms, fresh
  • 2 tbsp oil
  • 300 ml water
  • 2 tsp vegetable broth, instant
  • 150 g couscous

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 20 minutes

Peel the onion and dice it into small cubes. Wash the peppers and zucchini and dice them into small cubes. Trim and slice the mushrooms. Sauté the onions in hot oil. Sauté the vegetables for about 5 minutes. Add the water, stir in the broth, and bring to a boil. Stir in the couscous. Turn off the heat and let it swell, covered, for 5 minutes. 113 kcal per serving.
