Ingredients for 2 servings:

  • 265 g chickpeas (drained weight)
  • 200 g feta cheese, vegan (see tip)
  • 1 bell pepper
  • 1 onion(s), red
  • ½ cucumber(s)
  • 2 tbsp olives, sliced
  • 2 tbsp parsley, chopped
  • 100 ml olive oil
  • 50 ml white wine vinegar
  • 1 tbsp lime juice
  • 1 ½ tsp salt
  • 1 tsp pepper
  • ½ tsp chili flakes

Drain and rinse the chickpeas. Drain in a colander and place in a large bowl. Quarter the cucumber lengthwise and slice. Add it to the bowl along with the sliced ​​olives. Dice the bell pepper and feta, quarter the onion lengthwise and slice. Add it to the bowl along with the chopped parsley. Finally, mix the dressing ingredients and stir in.
