Vegetable Crostini

Ingredients for 4 servings:

  • 1 baguette(s)
  • 1 carrot(s)
  • 1 zucchini
  • 1 spring onion(s)
  • 1 egg yolk
  • 2 tbsp crème fraîche
  • 80 g cheese (Gruyère)
  • salt and pepper
  • Parsley
  • Paprika powder

Instructions

Working time approx. 40 minutes; Total time approx. 40 minutes

Coarsely grate the carrot and zucchini. Finely chop the spring onion. Finely chop the parsley. Heat 1 tbsp. butter. Sauté the spring onion in it. Add the vegetables and roast until al dente. Season with salt, pepper, and parsley. Let cool. Coarsely grate the Gruyère cheese as well. Mix with the egg yolk, crème fraîche, and the cooled vegetables. Season with salt, pepper, and a little paprika. Cut eight slices from the baguette. Spread each with the vegetable mixture. Place on a baking sheet and place in a preheated oven at 220°C (425°F). Bake for ten minutes.
