Vegetable filling for tortillas

Ingredients for 4 servings:

  • 2 red bell peppers
  • 1 zucchini
  • 2 onions
  • 200 g beans, frozen
  • 100 ml cream
  • 150 g cheese, grated
  • 1 tbsp butter
  • some salt and pepper
  • some thyme

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 45 minutes

Dice the bell peppers and zucchini. Finely chop the onions and sauté everything in the hot butter for 5 minutes. Add the beans and cream and season with salt, pepper, and thyme. Then cover and let simmer for about 10 minutes. Stir the grated cheese into the braised vegetables and season again if desired. Then fill the flour tortillas with the mixture. You can use ready-made tortillas, but I’ve now found a fantastic recipe for flour tortillas here in the CK database. Tip: If I have any filling left over, I make a few more tortillas the next day. Sear 200g of ground beef, season it well, and fold in the rest of the filling, stirring until everything is nice and hot. This makes another great filling.
