Vegetable meatballs

Ingredients for 4 servings:

  • 375 g vegetables (Kaisergemüse), frozen
  • some vegetable broth
  • 150 g corn from the can, drained
  • 500 g potatoes, floury
  • 4 tbsp, heaped oat flakes, fine
  • 2 tbsp spelt bran
  • 70 ml milk
  • 2 eggs
  • Salt
  • e.g. breadcrumbs
  • Clarified butter

Sauté the Kaisergemüse in a little vegetable stock for about 10 minutes, depending on their size, until al dente. Peel the potatoes and boil them in salted water until they can be mashed with a fork. Allow the vegetables and potatoes to cool slightly. Mash the potatoes and mix with a little milk, oatmeal, and spelt bran. Chop the vegetables slightly and fold them in along with the corn, season with salt. Form 16 cevapcici from the mixture. Coat them in egg and breadcrumbs and fry them all over in a pan in clarified butter. Serve with tzatziki and ketchup, for example. The vegetable sticks can be eaten as a side dish, e.g. with grilled food or fish sticks, or as a main meal.
