Vegetable meatballs with herb sauce

Ingredients for 4 servings:

  • 250 g potatoes
  • 150 g carrot(s)
  • 100 g celery
  • 100 g onion(s)
  • 1 garlic clove(s)
  • 1 egg(s)
  • 50 g oat flakes
  • Salt and pepper, paprika
  • 1 bunch of thyme
  • 100 g sheep’s cheese
  • 2 cups of yogurt (cream yogurt)
  • 1 bunch of dill
  • 1 garlic clove(s)
  • salt and pepper
  • Sugar
  • 1 tbsp lemon juice
  • 1 bunch of parsley
  • 1 bunch of basil
  • Oil for frying

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Wash and trim the potatoes, carrots, and celery. Grate the vegetables using a food processor. Peel and finely dice the onion. Using a hand mixer, knead the onion and vegetables with the crushed garlic clove, egg, oats, finely chopped thyme, salt, paprika, and pepper. Cut the feta cheese into 8 cubes. Form 8 meatballs from the vegetable dough. Press the feta cheese into the center of each. Fry the vegetable meatballs in a little oil for 10 minutes on each side over low heat (1 1/2 minutes). For the herb sauce, use a hand mixer to combine the yogurt with the spices, lemon juice, and crushed garlic clove; season to taste. Stir in the finely chopped herbs.
