Vegetable paella with or without minced meat

Ingredients for 4 servings:

  • 300 g minced meat
  • 3 bell peppers, red, yellow and green
  • 1 stalk(s) leek
  • 2 onions
  • 1 garlic clove(s)
  • 4 carrots
  • 1 cup(s) rice (large cup)
  • salt and pepper
  • 1 tsp oregano
  • 2 cup(s) water, hot
  • 4 tbsp tomato paste

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Clean and chop the vegetables. Fry the ground beef in olive oil. Fry the carrots, diced onions, and leek rings, and sauté. Then add the diced bell peppers and rice, and stir. Add hot water, season with salt and pepper, and stir in the tomato paste. Cover and simmer over low heat for about 30 minutes, until the rice is tender, stirring occasionally. Very tasty and also ideal for children! For vegetarians and vegans: omit the ground beef.
