Ingredients for 2 servings:

  • 2 m.-sized onion(s)
  • 1 small garlic clove(s)
  • 4 medium-sized carrots
  • 4 m.-large parsley roots
  • 1 m.-large zucchini
  • 2 large tomatoes
  • 4 m.-large mushrooms
  • 1 pkt. sheep’s cheese, medium-sized

Working time approx. 20 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 45 minutes

First, peel and roughly chop the onion. Then, peel the carrots and parsley roots. Then, slice the zucchini, tomatoes, mushrooms, carrots, and parsley roots. Add 3 tablespoons of oil to a pan and sauté the onions and garlic clove. Gradually add the chopped vegetables and cook for about 10 minutes at medium heat. Meanwhile, preheat the oven to 175 degrees Celsius (350 degrees Fahrenheit). Add the vegetables to the oven and cook for another 10 minutes. Then remove the pan, crumble the feta cheese over them, and bake for another 5 minutes. Your delicious and healthy vegetable stir-fry is ready. If you like, you can also grate Parmesan cheese over the top.
