Vegetable pan with garlic bread

Ingredients for 4 servings:

  • 1 baguette(s)
  • butter
  • 2 cloves garlic
  • 700 g bell pepper(s), mixed
  • 400 g zucchini
  • 200 g leek
  • 8 sprigs of thyme
  • 1 tsp lemon(s), zest and juice
  • 2 tbsp lemon juice
  • 200 g feta cheese or other cheese of your choice

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 30 minutes

Cut the baguette open, spread with butter, and arrange 1 garlic clove on top. Roast in the oven according to the package instructions. Meanwhile, dice the bell peppers, slice the zucchini, and leek. Chop the thyme and 1 garlic clove. Sauté the diced bell peppers in a large pan for about 3 minutes, add the zucchini and cook for 2 minutes, then add the leek, thyme, and garlic and cook for another 2 minutes. Season with salt, pepper, lemon zest, and lemon juice, and sprinkle with cheese cubes. Serve with the garlic bread. Important: Follow the cooking times exactly to ensure the vegetables have the right bite.
