Ingredients for 2 servings:

  • 1 zucchini
  • 1 eggplant(s)
  • 1 bell pepper(s), yellow
  • 2 tomatoes
  • 2 carrots
  • 1 cup cream cheese, grainy
  • salt and pepper
  • Herbs, as desired
  • Oil or butter

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Clean and wash the vegetables. Thinly slice the zucchini and carrots, dice the eggplant, peppers, and tomatoes, and fry them in a little oil or butter. Finally, add the cream cheese and heat briefly again. Season to taste. This dish goes well with any kind of meat or fish, or simply with baguette or ciabatta.
