Vegetable pan with minced meat

Ingredients for 4 servings:

  • 500 g minced meat, mixed
  • 1 large sweet potato(s)
  • 2 m.-large onion(s), red
  • 2 garlic cloves
  • 8 small potatoes, approx. 2 cm diameter
  • 5 small carrots
  • 1 bell pepper(s), red, yellow or orange
  • 10 cocktail tomatoes
  • ½ cucumber(s), green
  • 150 g shepherd’s cheese or feta cheese
  • salt and pepper
  • olive oil

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 50 minutes

Brown the minced meat in olive oil. Chop the onions and garlic cloves and add them. Meanwhile, peel and dice the sweet potato and wash the baby potatoes and cut them into eighths without peeling. Add both to the pan. Wash the baby carrots and cut them into 5 mm pieces and add them to the pan. Cover and let everything simmer. Wash the bell pepper, cut it into pieces and add it to the pan. Season with salt and pepper to taste and simmer with the lid on for about 10 minutes. Meanwhile, quarter the tomatoes and dice the cucumber. Add both to the pan, mix well and simmer uncovered for about 5 minutes. Remove the pan from the heat, stir in the diced cheese and serve immediately.
