Vegetable soup with minced meat

Ingredients for 4 servings:

  • 500 g minced meat, mixed
  • 1 cup cream cheese
  • 2 m.-sized onion(s)
  • 5 large carrots
  • 7 large potatoes
  • 1 clove(s) garlic
  • 1 liter vegetable broth

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 40 minutes

Finely chop the onions and garlic. Then wash the vegetables and also chop them. First, fry the onions in olive oil in a pan until golden brown, then add the garlic. Once the garlic is sufficiently heated, add the minced meat and mix with the onions and garlic until the minced meat is also well browned. Then deglaze the contents of the pan with the vegetable stock, then add the carrots. After a few minutes, add the potatoes to the pan, as they take less time to cook. Once the vegetables are al dente, add the tub of cream cheese. Once everything is well mixed and the vegetables are already cooked, the soup is ready to serve.
