Ingredients for 4 servings:

  • 2 zucchinis
  • 8 m.-sized carrot(s)
  • 4 m.-sized eggs
  • 250 g low-fat curd cheese
  • salt and pepper
  • 1 bunch of chives
  • some oil for frying

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 25 minutes

Finely grate the zucchini and carrots and mix with the eggs. Season the mixture with salt and pepper. Heat the oil in a pan, form the mixture into round, flat patties, and then fry them well on both sides in the hot oil. Meanwhile, finely chop the chives and mix them with the quark, seasoning with salt and pepper if desired. Serve with the patties. I also like to serve them with mashed potatoes.
