Ingredients for 2 servings:

  • 400 g potatoes, floury
  • 400 g mixed vegetables, e.g. carrots, kohlrabi, zucchini, cauliflower, broccoli
  • 1 bunch chives, chopped
  • 1 egg(s)
  • some oat flakes
  • 1 handful of flour, for turning
  • some oil for frying
  • salt and pepper
  • nutmeg, or curry or chili flakes

Wash, trim, peel, and chop the potatoes and vegetables. Boil everything together in a large pot of boiling water until soft. Drain and reserve the vegetable water, and mash the vegetables. Mix with the chives and egg. Season to taste with salt, pepper, and nutmeg. Now thicken the vegetable mixture with the oatmeal. If it becomes too thick, simply thin it with the reserved vegetable water. Form small patties from the mixture and coat them in flour. Heat the oil in a pan and fry the vegetable patties until golden and crispy. Tip: I usually make a sauce from the reserved leftover water; if I’m in a hurry, I serve it with tzatziki. These patties can be varied in thousands of ways depending on the vegetables and spices. Just experiment.
