Ingredients for 2 servings:

  • 500 g potatoes
  • 300 g vegetable mix (frozen, variety of your choice)
  • 50 g Parmesan, freshly grated
  • 1 egg(s)
  • 1 tbsp parsley, chopped
  • e.g. salt and pepper
  • 2 tbsp flour
  • 2 tbsp flour or breadcrumbs for turning the patties
  • Oil for frying

Working time approx. 20 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 40 minutes

made from boiled potatoes and vegetables

Boil the potatoes in their skins. Meanwhile, blanch the vegetables (I like to use colorful Puszta vegetables such as peppers, peas, carrots, corn, green beans, and cauliflower) in salted water until al dente, then drain. Peel the potatoes while they are still hot and press them through a potato ricer into a large bowl. Add the vegetables, Parmesan cheese, egg, and 1-2 tablespoons of parsley. Season with salt and pepper. Add the flour (a little more if needed) and mix well. Now, with wet hands, form flat patties, coat in breadcrumbs or plain flour, and fry in hot oil until golden brown. Note: This quantity makes 11-12 patties. Serve with a sour cream and herb dip and a green salad. Tip: If you like, you can also mix in small cubes of ham.
