Vegetable quiche

Ingredients for 4 servings:

  • 300 g flour
  • 3 tsp baking powder
  • 1 tsp salt
  • 70 ml oil
  • 100 ml water
  • 1 m.-sized egg(s)
  • Fat for the mold
  • 200 g peas, fresh or frozen
  • 200 g corn kernels
  • 1 m.-sized onion(s)
  • 1 garlic clove(s)
  • 3 eggs
  • 200 ml cream
  • 200 g grated cheese, e.g. Emmental or Gouda
  • salt and pepper
  • Nutmeg, optional

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 1 hour

vegetarian, simple

Knead the flour, baking powder, salt, oil, water, and egg into a dough and let it rest for a while. Finely chop the onion and garlic and sauté until translucent. Mix the peas, corn, onion, and garlic. You can, of course, use other vegetables as well. Mix the cream, eggs, and cheese to make a topping and season well with salt, pepper, and nutmeg, if desired. Pour the dough into a greased quiche or springform pan and form a rim about 2 cm high. Spread the vegetables over the dough and pour the topping on top. Bake in the oven at 160°C fan/convection oven (180°C top/bottom heat) for about 30 minutes.
