Vegetable sauce for pasta

Ingredients for 4 servings:

  • 450 g leaf spinach, (frozen)
  • 450 g beefsteak tomatoes (approx. 3 pieces)
  • 2 onions
  • 2 garlic cloves
  • 1 tbsp oil
  • 100 g cream cheese, 0.2% fat
  • 150 ml vegetable broth (instant or homemade)
  • pepper
  • nutmeg
  • Salt

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

with leaf spinach and tomatoes, suitable for WW

Peel and chop the garlic and onions, and sauté in the oil until translucent. Add the frozen spinach and vegetable stock and cook for about 8-9 minutes. Dice the tomatoes and stir them into the spinach along with the cream cheese. Season to taste with salt, pepper, and perhaps nutmeg. For WW fans: The sauce has a total of 5 points.
