Vegetable Soup with Meat Sausage

The perfect vegetable soup with meat sausage recipe with a picture and simple step-by-step instructions.

  • 1 bunch Soup greens fresh
  • 600 g Potatoes
  • 1 tbsp Rapeseed oil
  • 1 liter Vegetable broth
  • 1 tsp Dried marjoram
  • 150 g Meat sausage
  • 150 g Sour cream
  • Salt and pepper
  1. Soup greens: Peel the carrots, cut into thin slices and quarter them. Clean the celery and cut into small cubes. Cut the leek into thin rings. Roughly chop the parsley, peel the potatoes and cut about 1cm pieces.
  2. Heat the oil in a saucepan. Sauté the soup greens and potatoes in it over a medium heat for 5 minutes. Add the stock and marjoram, bring to the boil and simmer for 20 minutes.
  3. I cut out the first 3 slices of the meat sausage with a cookie cutter in the shape of a butterfly (for decoration), cut the remaining meat sausage in half and cut into about 1cm thin slices. Add the sausage slices to the soup and warm them up slightly. With salt and pepper Spice up . Arrange the soup on plates with sour cream and serve sprinkled with the parsley.
