Vegetable soup with noodles

Ingredients for 4 servings:

  • 1 vegetable onion(s), diced
  • 2 garlic cloves, finely diced
  • 2 tbsp olive oil
  • 1 kg soup vegetables (frozen)
  • 1 ½ liters vegetable broth
  • some salt and pepper
  • Paprika powder
  • 1 sprig(s) rosemary
  • 2 zucchini, diced
  • 150 g noodles (soup noodles)
  • 500 g tomatoes, pureed
  • 1 bunch parsley, chopped
  • some vinegar

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 30 minutes

Sauté the onion and garlic in olive oil, add the vegetables, and pour in the vegetable stock. Season with salt, pepper, and paprika, and add the rosemary. Simmer for about 5 minutes, then add the zucchini cubes and pasta to the soup. Simmer until the pasta is tender. Add the passata and chopped parsley, and season with vinegar, salt, and pepper.
