Ingredients for 4 servings:
- 150 g soy granules (soy strips), fine
- 2 stalk(s) leeks
- 2 large onions
- 1 liter vegetable broth
- 5 tbsp tomato paste
- 1 tbsp mustard, medium hot
- 1 tsp salt
- 1 tsp sugar
- 1 tsp sweet paprika powder
- 250 ml soy cream (Soy Cream Cuisine)
- Harissa
- pepper
Instructions
Working time approx. 30 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 45 minutes
Preparation with soy
Prepare the soy strips according to the package instructions. In the meantime, slice the leek into strips and dice the onions. Sauté the onions in oil and add the soy strips. Add the leek, tomato paste, broth, mustard, and seasoning to the soy strips. Simmer for about 15 minutes, stirring frequently. Finally, stir in the soy cream. For a little more spice, I like to add a little harissa.
