Ingredients for 6 servings:
- 250 g gyros meat
- 200 g fresh leaf spinach
- 2 cloves garlic
- 1 vegetable onion(s)
- 2 cans of tomatoes, chopped, approx. 400 g each
- 1 zucchini
- 500 g red pointed peppers
- 1 cup of tzatziki
- 1 tsp Pul Biber
- 20 g coriander leaves, fresh
- salt and pepper
- Paprika powder, sweet
Instructions
Working time approx. 25 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 1 hour 5 minutes

Fry the gyro meat until crispy and set aside. Cut the vegetables into bite-sized pieces, finely dice the onion and garlic. Wash the spinach thoroughly and remove any large stems. Sauté the onion in a deep pan, pot, or wok, add the vegetables, and fry briefly. Then deglaze everything with the canned tomatoes and add the garlic. Let everything simmer briefly, then add the pul biber. Mix in the spinach and coriander and simmer on low heat with the lid closed for about 25 minutes. Season liberally with the spices, if desired. Serve the vegetable stew with the gyro and add a dollop of tzatziki to the plate. Serve with pita bread, if desired.
