Ingredients for 1 servings:
- 1 pack of puff pastry
- 1 cup crème fraîche
- 125 g mozzarella, grated
- 200 g mixed vegetables (corn, peas, carrots), frozen
- salt and pepper
- Paprika powder
- chives
- Parsley
Instructions

Preheat the oven to 180°C fan/convection oven. Line a baking tray with baking paper and set aside. Cook the vegetable mixture in the microwave or on the stovetop until tender. Drain the water and add the crème fraîche. Then add the grated cheese and chopped herbs and season with salt, pepper, and paprika. Once all the ingredients are well mixed, roll out the puff pastry and spread the vegetable mixture on top. Roll it into a strudel and bake at 180°C until the strudel is nice and brown. I hope the amounts of vegetables and cheese are correct. I usually do it by heart. Of course, this can be adjusted. If you like more vegetables, add more. The amount of cheese can also vary, but the cheese is a must, otherwise the strudel doesn’t taste as good.
