Vegetable tortelloni with homemade tomato sauce

Ingredients for 2 servings:

  • 1 can of tomatoes, pureed or chopped
  • ½ bunch chives
  • 10 cherry tomatoes
  • Herbs of Provence
  • salt and pepper
  • some crème fraîche for cooking (7% fat)
  • 200 g pasta (vegetable tortellini)
  • salt water

Instructions

Working time approx. 5 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 15 minutes

Cook the tortellini in salted water according to the package instructions. Place the canned tomatoes in a small saucepan and heat gently. Finely chop the chives and cherry tomatoes and add them. Add crème fraîche to taste and mix well. Once boiling, season with salt, pepper, and Provençal herbs. Drain the cooked tortellini and arrange on warmed plates. Spoon the sauce over the tortellini and serve immediately.
