Ingredients for 4 servings:

  • 400 g zucchini
  • 200 g carrot(s)
  • 250 g flour
  • 175 g low-fat yogurt or skyr
  • 2 eggs
  • 1 onion(s)
  • 1 garlic clove(s)
  • salt and pepper
  • Herbs of your choice or herbal salt

Working time approx. 15 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 45 minutes

Peel and finely grate the zucchini and carrots. Finely dice the onion and garlic clove or press them through a garlic press. If preparing in a Thermomix, drop the zucchini, carrots, onion, and garlic into the rotating blade at speed 5. Mix the vegetables in a bowl with the flour, yogurt, and eggs. Then season the mixture to taste. I like to use herb salt or fresh herbs and a little pepper. Preheat the waffle iron to medium heat. Pour about 2 tablespoons of the mixture into the hot waffle iron and bake until the batter is used up. It goes very well with sour cream, herb cream cheese, or quark.
