Vegetable yogurt "Carrot"

Ingredients for 2 servings:

  • 250 g natural yogurt, 3.5%
  • 3 tbsp quark, 20%
  • 1 m.-sized carrot(s)
  • 1 piece(s) butter
  • 1 tsp, heaped honey, liquid
  • ½ tsp sweet paprika powder
  • 1 piece(s) ginger, 1 cm
  • 1 dashes lemon juice

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 20 minutes

the alternative to fruit yogurt

Peel the carrot and finely grate it using a mandoline. Melt a little butter in a non-stick pan, add the grated carrots, honey, paprika, and a squeeze of lemon juice, and sauté everything over medium heat until the carrots are tender. Set aside and let cool. Now place the yogurt, quark, and crushed ginger in a blender, add the cold, prepared grated carrots, and blend until smooth. Pour into 2 glasses and either serve immediately or cover with cling film and store in the refrigerator. The vegetable yogurt will keep in the refrigerator for about 2-3 days. Vegetable yogurts are a nice change from fruit yogurts and are very trendy in the USA.
