Vegetables: Fried Asparagus with New Potatoes

The perfect vegetables: fried asparagus with new potatoes recipe with a picture and simple step-by-step instructions.

  • 500 g Asparagus, green, fresh
  • 500 g Asparagus, white, fresh
  • 5 piece Wild garlic butter florets *
  • Salt and pepper
  • Water
  • 12 piece Potatoes, new and small
  1. Cook the potatoes until soft as usual.
  2. Clean the asparagus (boil the shells and sections for a soup) and cut into pieces approx. 4 – 5 cm long.
  3. Melt half of the wild garlic butter in a pan and fry half of the asparagus in it. (Takes about 5 minutes.) Take out and do the same with the second half.
  4. Now add the first half of the fried asparagus again, season with salt and pepper and pour in some (really little) water. Put the lid on the pan, switch off the stove and cook the vegetables with the residual heat – of course NOT with gas.
  5. In the meantime, peel the potatoes.
  6. Place the potatoes and savory pieces on a preheated plate and garnish with fresh herbs.
