Ingredients for 4 servings:

  • 3 onions
  • 1 floury apple
  • 2 eggs
  • 50 g fat, vegetable (e.g. margarine)
  • 250 g cheese (Emmental), grated
  • 350 g pasta (macaroni or penne)
  • 1 pinch of nutmeg
  • salt and pepper
  • some flour
  • 1 cup milk

Working time approx. 45 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 1 hour 15 minutes

Cook the pasta in salted water until al dente. Meanwhile, peel and chop the apple and finely dice the onions. Add the onions to the hot pan. When the onions start to turn yellow, add the apple pieces. When the onions are golden brown, dust everything with flour and add a little vegetable oil. Stir continuously and have the milk ready. Deglaze everything with the milk and continue stirring. The sauce will thicken gradually. When the sauce is creamy like yogurt, season with nutmeg, salt, and pepper. Scramble the two eggs as usual. Drain the pasta and let it drain. Place the pasta in a baking dish, sprinkle with a little grated cheese, then the sauce, the egg, and another, but this time more generous, layer of cheese. Place everything in the oven at 200°C for about 15-20 minutes.
