Vegetarian: Casunziei with Mushroom Filling
The perfect vegetarian: casunziei with mushroom filling recipe with a picture and simple step-by-step instructions.
Pasta dough:
- 300 g Viennese Griessler
- 3 Eggs
- 3 El Oil
- Salt
Filling:
- 100 g Mushrooms fresh
- 50 g Parmesan
- 2 El Breadcrumbs
- 0,5 bunch Fresh coriander
- 1 Onion
- Salt and pepper
Pasta dough:
- Work all the ingredients into a dough and let it rest for an hour at room temperature.
Filling:
- Sweat the onions in butter, cut the mushrooms into small pieces, add seasoning and fry well. Then chop the mushrooms in a multi-chopper.
- Now mix the mushrooms with the other ingredients and season again. Roll out the pasta dough, cut out small circles, add a spoonful of the filling and fold it up, then briefly pour it into boiling salted water until it floats on top. Sprinkle with Parmesan cheese.
