Vegetarian: Casunziei with Mushroom Filling

The perfect vegetarian: casunziei with mushroom filling recipe with a picture and simple step-by-step instructions.

Pasta dough:

  • 300 g Viennese Griessler
  • 3 Eggs
  • 3 El Oil
  • Salt

Filling:

  • 100 g Mushrooms fresh
  • 50 g Parmesan
  • 2 El Breadcrumbs
  • 0,5 bunch Fresh coriander
  • 1 Onion
  • Salt and pepper

Pasta dough:

  1. Work all the ingredients into a dough and let it rest for an hour at room temperature.

Filling:

  1. Sweat the onions in butter, cut the mushrooms into small pieces, add seasoning and fry well. Then chop the mushrooms in a multi-chopper.
  2. Now mix the mushrooms with the other ingredients and season again. Roll out the pasta dough, cut out small circles, add a spoonful of the filling and fold it up, then briefly pour it into boiling salted water until it floats on top. Sprinkle with Parmesan cheese.
