Vegetarian Cauliflower Patties

The perfect vegetarian cauliflower patties recipe with a picture and simple step-by-step instructions.

  • 300 g Cauliflower
  • 30 g Sunflower seeds
  • 100 g Chickpea flour
  • 1 Pc. Onion, finely chopped
  • 1 tsp Turmeric
  • 1 Msp Grated nutmeg
  • 1 Pc. Egg
  • 25 g Grated Parmesan cheese
  • 0,5 tsp Vegetable broth powder
  • 1 Msp Ground caraway seeds
  • 1 tbsp Flaxseed, crushed or ground
  • 1 tsp Dried herbs
  • Oil for frying
  1. The amount of cauliflower is about half a cauliflower. I chopped the cauliflower the size of rice in the blender and then simmered it briefly in vegetable broth for 3 minutes. But you can also use the cauliflower raw.
  2. Mix all ingredients together briefly and thoroughly. Shape approx. 10 – 12 patties with your hands and fry them in the pan in heated oil for approx. 5 minutes on each side. Alternatively, you can prepare it in the oven: Spread some oil on a baking sheet lined with baking paper and place the patties on top. Bake in the preheated oven on the middle shelf at 200 degrees top / bottom heat for about 30 minutes, turning once after about 20 minutes.

Tips:

  1. The patties are easy to prepare on the grill even in summer. Since they taste warm and cold, they are also ideal for the lunch box. They can even be used as burger patties. As you can see … it is an incredibly versatile recipe 🙂 If small children eat too, I would leave out the sunflower seeds.
  2. For a vegan variant, leave out the egg and grated cheese. To do this, add about 2 tablespoons of flaxseed to the mixture.
  3. I like to prepare the patties in the oven and top them with mozzarella or goat cheese after turning them.
