Vegetarian Chow Mein

Ingredients for 2 servings:

  • 1 handful of carrots, cut into small pieces
  • 1 small broccoli, cut into small pieces (without the woody part)
  • 1 bunch of spring onions, sliced ​​2 mm wide
  • 350 g noodles (chow mein / not glass noodles!)
  • 250 g soy sprouts
  • Oil (sesame oil)
  • Soy sauce
  • Salt
  • pepper
  • Oil (sunflower oil)

Working time approx. 20 minutes; Total time approx. 20 minutes

Cook the chow mein noodles for one minute less than the package tells you to. Drain and pour over plenty of cold water. While the noodles are cooking, fry the sliced ​​onions in a little sunflower oil until just tender. Add the carrot pieces and the soy sprouts and fry briefly. Add the broccoli. Cut the noodles into pieces with scissors and fry everything over high heat. Season to taste with a little salt, pepper, plenty of soy sauce, and sesame oil. Serve immediately.
