Ingredients for 2 servings:
- 3 bell peppers, mixed
- 1 large onion(s)
- 400 g mushrooms
- 2 garlic cloves
- 100 g cherry tomatoes
- 1 pack of tortilla(s), large (approx. 2-3 tortillas per person)
- 2 tbsp oil
- 200 g sour cream
- 1 jar tomato sauce (tomato salsa)
- salt and pepper
- chili powder
- Paprika powder
- herbs, Italian
- possibly vegetables, e.g. zucchini or eggplant(s)
- possibly meat

Working time approx. 15 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 25 minutes

For the fajita filling, cut the bell peppers into strips and cut them into thirds. Slice the mushrooms, cut the onions into thin wedges, and chop the garlic. Heat the oil and sauté the onions until translucent. Add the mushrooms and cook, covered. When the mushrooms release their liquid, add the bell peppers and garlic, and cook everything together for 2-3 minutes. Halve the cherry tomatoes, add them, and stir in. Season to taste and simmer, covered, until everything else is ready. Heat the tortillas according to the package instructions (microwave or pan). Then serve the tortillas, fajita filling, sour cream, and tomato salsa separately. To serve, spread one half of each tortilla with tomato salsa and sour cream, then place the filling on one half and fold the other over the other. This dish can be varied as desired. Other vegetables, such as zucchini and eggplant, or even browned meat can be added. If you like, you can also serve guacamole.
