Ingredients for 8 servings:
- 500 g Skyr
- 500 g yogurt
- 10 garlic cloves
- 500 g feta cheese
- 6 leeks
- 1 ½ kg potatoes
- 6 onions
- 600 g Gouda, grated
- 500 g broth
- 360 g meat substitute (vegetarian minced meat substitute)
- 4 eggs
- salt and pepper
- basil
- Thyme
Instructions
Working time approx. 30 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 1 hour 10 minutes
Put the skyr, yogurt, garlic cloves (pressed or diced), and eggs in a bowl and mix. Season to taste with the spices. Crumble the feta into the bowl. Wash the potatoes with their skins on, remove any damaged areas such as the eyes, and then thinly slice them into a large bowl. Dice the onions and sauté them in a pan with a little olive oil. Then add the stock and bring to a boil briefly. Add the leek and simmer briefly (not too long). Briefly fry the vegetarian mince in a pan with olive oil. Add everything to the large bowl with the potatoes and mix lightly. Fold in 400g Gouda. Grease a baking dish with a little olive oil and fill it with the mixture, then spread the remaining 200g Gouda on top. Bake in a preheated oven at 180°C for approx. 40 minutes.
