Ingredients for 1 servings:
- 400 g tomatoes
- 100 g waffles (rice cakes)
- 1 m.-sized onion(s)
- 100 ml oil
- 200 ml vegetable stock
- 1 tsp salt
- 1 tsp pepper
- 1 bunch parsley, chopped
- 1 pinch of smoked salt
Instructions
Working time approx. 10 minutes; Rest time approx. 15 minutes; Total time approx. 25 minutes
Bread spread with tomato and rice cakes, low-fat, vegetarian, vegan
Chop the tomatoes and onions, crumble the rice cakes, chop the parsley, and mix all ingredients. Chill. Serve on rolls or brown bread. Also suitable as a dip. 11.2 g fat, of which approximately 9.5 g are unsaturated fatty acids (depending on the oil; I use Alba oil).
