Vegetarian Mozzarella Burger

Ingredients for 4 servings:

  • 2 balls of mozzarella (buffalo mozzarella)
  • 2 bell peppers, red
  • 2 bell peppers, yellow
  • 1 eggplant(s)
  • Wild garlic and/or basil pesto
  • Garlic, pureed
  • salt and pepper

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Cut the eggplant into slices about 1cm thick and fry in olive oil until brown (2 slices per person). Grill the peppers in the oven until browned, sweat in a freezer bag and after about 15 minutes peel off the skin, marinate in a vinaigrette (can be prepared the day before). Layer the burger: 1 slice of eggplant 1 slice of mozzarella spread with wild garlic pesto or basil pesto 1 slice of yellow pepper 1 slice of mozzarella spread with garlic puree 1 slice of eggplant 1 slice of mozzarella spread with pesto 1 slice of red pepper Season with salt and pepper to taste. Drizzle with the marinade at the end. Variation with goat’s cheese instead of mozzarella Serve as a starter with baguette.
